Passavolanti, o meglio passavulanti di Vicari, fanno parte della grande varietà di leccornie della pasticceria siciliana. Inventati nel ‘700 dai monaci del convento di San Francesco, a Vicari, paesino dell’entroterra palermitano, per omaggiare gli invitati al matrimonio della figlia del re, non sono altro che biscotti di mandorle, fatti con ingredienti semplici e genuini come uova, farina, zucchero e mandorle. Ma perché “Passavolanti”? Dice la storia, che i monaci, non avendo previsto il gran numero di invitati alle nozze, cominciarono a passare velocemente i dolcetti tra i commensali che per assaggiarli, furono costretti a prenderli a volo.
